Sometimes we find ourselves craving specific foods, like a certain flavor of chips or ice cream or store bought cookies, and we might not be able to get to them quick enough. Maybe you don’t have your license and can’t drive somewhere to pick it up or you just don’t have someone to take you to the store. Maye the store is closed, or maybe you’re just a broke high school student without a job. Well, I’m here to help!
Just the other night I was craving some of those amazing Pillsbury sugar cookies. You know the ones. The ones so good you could eat five packs before remembering to offer any to your friends sitting with you watching you eat – not that I’ve ever done that before. So that night I sat there thinking about the intense flavor of the cookies: The soft inside with a crunchy outer layer, I thought about the warmth and sweetness of those irresistible cookies, but unfortunately, it was late and stores were closed.. But it later occurred to me that I might be able to find a copycat recipe online. There were no promises that it would be as good as the real thing, but I had to try something. I scoured the internet for a reliable recipe with good reviews and eventually stumbled upon The Squeaky Mixer’s Pillsbury cookie copycat recipe.
I began by mixing the dry ingredients: flour, baking powder and salt. In a separate bowl I combined softened butter with granulated sugar. After mixing it all together I added an egg and some vanilla extract. I turned on the hand mixer and let it do its job.
After the ingredients were thoroughly mixed together, I transferred the contents of the bowl to a sheet of plastic wrap and shaped it into a log, later tossing it into the fridge. After two hours, the dough was ready to be cut into circles and placed on a cookie sheet and into the oven for 10 minutes at 375 degrees.
After the cookies had cooled, it was time for the taste test! For the most part, the cookies were true to the Pillsbury texture, although they were slightly grainier. They were sweet, but the sweetness felt different than the original. They didn’t taste any less sweet, but the type of sweetener used might have been different. Although I liked the cookies, I think I still prefer the taste of the original Pillsbury cookies more. One similarity between the two was that the longer that they were left out, the better they tasted and the better the texture was in my opinion. Just like Pillsbury cookies, you can place the dough in the freezer until you decide you’re craving a cookie, and all that’s left to do is to place it in the oven.
